It's the hottest time of the year for spicy, saucy wings

The way Michael Deary sees it, when you're a football fan, you gotta wing it.

On game days, you can smell the excitement in Deary's Elk Grove, Calif., kitchen as he starts frying up his Buffalo wings early so he'll have a big pile for friends and family to tackle by kickoff.

"I'm a fanatic about them," says the longtime Raiders fan. "My friends come over, and they're like, 'You're cooking wings at 8 in the morning?'"

Wings have found a winning teammate in football -- with wing consumption peaking on Super Bowl weekend. Last year, more than 1 billion wing servings flew into the sunset and into human gullets during the big game weekend, the National Chicken Council reports.

SOUTHWESTERN GRILLED CHICKEN WINGS WITH BLACK BEAN DIP

2 pounds chicken wings

2 tablespoons butter, melted

2 tablespoons hot pepper sauce

1 teaspoon cumin

2 tablespoons fresh cilantro, chopped

2 tablespoons lime juice

Dip ingredients

1/2 cup cooked black beans, drained

1/4 cup prepared salsa verde

1/4 cup sour cream

1 tablespoon lime juice

2 teaspoons hot pepper sauce

2 teaspoons fresh cilantro, chopped

1/2 teaspoon salt

Prepare gas or charcoal grill, or preheat broiler.


HSU celebrates Lunar New Year

While other Humboldt State University students were getting ready to start their day, or attend class Wednesday morning, Shuai Chen was wishing a happy new year to her family in China.

An international student from Xi´an, China, Chen was recognizing the beginning of the Lunar calendar, one of the most significant holidays in several Asian cultures.

Lunar New Year starts today for the United States, but since Chen's family lives on the other side of the world, they've already been celebrating for a day and a half.

Similar to the U.S. New Year, Lunar New Year signals a fresh start and a time to bring good fortune to households. Traditionally focused around spending time with family and eating special dishes, students who are far away from home are finding it hard to celebrate without their loved ones.


Recipe makes delicious coleslaw

Dear Heloise: I remember a delicious coleslaw recipe in your column a few months back, and I was wondering if you could please reprint it for me? — Ter, Gloucester, Mass.

This recipe goes way back to the 1960s, when my mother published it in Hawaii, and I can remember her making it all the time. You'll need:

1 head of cabbage (about 2 pounds), shredded 1/4 cup vegetable oil 2 tablespoons vinegar 1/2 teaspoon prepared mustard 1/4 teaspoon celery salt 2 tablespoons mayonnaise Salt and pepper to taste Dash of paprika

Mix oil with vinegar in a bowl. Add prepared mustard, celery salt, mayonnaise, salt, pepper and paprika. Mix well. Pour mixture over shredded cabbage, toss and refrigerate. For the best taste, make this a day ahead so the flavors have a chance to blend. Goodbye barbie, hello pizza oven

FIRE, earth and water. The modern Australian male has long used the humble barbecue as a conduit for these basic elements. Now men across Melbourne's suburbs are tossing their tongs in favour of more sophisticated implements - with delicious results.

For 58-year-old mechanic Ivan Mazeyko, the journey started some years ago. He wanted to build a wood-fired oven in his backyard. He talked about it with friends and family, but no one thought it would ever happen.

In preparation, he did a course on building a wood-fired oven, read books and spoke to lots of other men. Then he knocked down a corner of his garage. Once he got going, he couldn't stop. He built the oven. And a charcoal-fired barbecue like those of his native Uruguay. And cupboards using materials from his old indoor kitchen.


Primary election has 3 ballot types

The office is open weekdays from 8 to 4:30 for voting on either paper ballots or the electronic voting machines. The office also will be open for absentee voting on March 1 from 8 to noon.

Kneuss reminded voters to take identification to the polls. A current photo ID such as a drivers license or state ID card or a copy of a government document that shows the voters current address is required.
